Dinner at Home


Caprese Salad
This quick salad of tomato slices, whole, fresh basil leaves, and fresh mozzerella. Sprinkled with sea salt, pepper, balsamic and olive oil.

Italian Wedding Soup
Giao has been battling a cold for over a week now, so he requested Italian Wedding Soup as a fortifying comfort food. This soup is esssentially chicken broth (I used some beef broth for extra flavor), homemade meatballs, escarole, egg, parmasean and Israeli cous cous. Although my version varied from the Campbell's version Giao remembers, this was pretty good.
