Shrimp, Baby Octopus and Squid
The shrimp are a bit hard to cook on the grill because the shell always ends up sticking and we always forget to peel them first.

Brunch at In-N-Out Burger, Millbrae, CA
2 Triple-Triples and a Double-Double, Animal and Protein Style $13
For those of you unfamiliar with the ordering style at In-N-Out, that's 3 triple cheeseburgers (for Giao) and 1 double cheeseburger (for Alexis) all served with sauteed onions and wrapped in lerruce instead of a bun. This is the only fast food we eat by choice and we can even let the bible quotes on the trays slide because the burgers are such a good deal.

Steak and Eggs, with Bacon
We couldn't finish our steaks from the previous night, so we sliced up the leftovers and scrambled them with some eggs and cheese. And then we fried up some bacon, just for good measure.

Pan Fried Ribeye
This tender steak was marinated for about 15 minutes in steak seasoning and worcestershire sauce, the pan fried in a mixture of butter and olive oil for about 3 minutes on each side.
Avocado and Cucumber Salad
A very simple salad that harkens back to Alexis' childhood, as her mom rarely made salads that included lettuce. This was simply a sliced avocado, 2 sliced, peeled cucumbers seasoned with balsamic vinegar, salt and pepper.

Turkey, Tofu and Greens in Chili Black Bean Sauce
A quick stirfry with ground meat, silken tofu and some unknown greens from the Sunset Super, which were slightly bitter, but in a good way.
-1 block silken tofu, diced
-1 1/2 lbs greens
-3 tb dark soy sauce
-2 tb oyster sauce
-3 tb chili black bean sauce
-squeeze of fresh lemon
-1 packet Splenda
Add the soy sauce to the turkey and brown the meat. Add the the tofu, the oyster sauce, the chili black bean sauce and the Splenda and stir to combine. Add the greens and cover, allowing them to wilt considerably. Then remove the lid and sautee until the most of the licuid has evaporated and a thick sauce has formed. Spritz with lemon and serve.

Scrambled Eggs with Mozzerella and Basil, Topped with Homemade Guacamole
Mozzerella really isn't the best cheese to make eggs with because it contain so much moisture. But eaten right out of the pan, it's pretty good.

Chicken Fajitas
The Whole Foods no longer sells the good low carb tortillas from La Tortilla Factory. Instead, we were forced to buy some god-awful hemp tortillas. They were inedible. We should have just walked a few blocks farther to the Safeway to get the good kind. We won't make that mistake again. We ended up eating the fajita insides directly off of the tortilla.
-5 chicken breasts, thinly sliced into strips
-2 tb taco seasoning
Season with the taco seasoning (we were lazy today, but really it's better to just make a spice rub with cumin, garlic powder, salt, pepper and chili powder). Sautee on medium high until cooked through.
Peppers and Onions:
-2 bell peppers, julienned
-1 onion, thinly sliced
Sautee on medium low heat until soft and carmelized. Season with salt.
Guacamole:
-3 ripe avocados
-1 tomato, diced
-1/4 onion, minced
-8 cloves garlic, minced
-juice of 1 lime
-salt to taste
Smash the avocados with a fork and mix all of the other ingredients into the avocado.
Also, add yogurt or sour cream and cheese to complete your fajita.

Egg Salad with Celery Stalks
Dip the celery in the egg salad for a tasty snack or lunch. Packed with protein.
-5 eggs, hardboiled and roughly chopped
-3 tb mayo
-1 tb dijon mustard
-pepper to taste
-1 ts garlic powder
Mix all ingredients thoroughly.

Miso Soup
A great weeknight starter, but it will only hold up for a day or two in the fridge before the seaweed begins to disintegrate and make the soup appear a bit unappetizing.
-5 tb miso
-1 tb fish sauce
-1 block silken tofu, diced
-3 scallions, thinly sliced
-2 sheets nori, cut in small squares
Bring the water to a boil and whisk in the miso. Add everything else and take off the heat.
Whole Baked Trout and Roasted Asparagus
A simple, hands off, super-healthy weeknight dinner.
Bake on 400 for 10 minutes, or until flesh flakes.
Asparagus:
-1 lb asparagus, trimmed
-salt and pepper to taste
-a touch of olive oil
Season asparagus with salt and pepper, toss with a bit of olive oil and roast on 375 on a cookie sheet for about 20 minutes, or until sweet smelling and slightly browned. Turn occasionally.

Rosemary Balsamic Roasted Pork Loin with Rutabaga and Brussel Sprouts
The pork was tender and flavorful, but the rutubaga had been sitting in the fridge too long, had lost a lot of it's moisture and, as a result, never really got soft in the roasting process.
-1 lb brussel sprouts, trimmed and halved
-salt and pepper to taste
Toss with olive oil, salt and pepper. Put in a baking dish, cover with tinfoil and roast until tender.
-1 1/2 lb pork loin
-1/8 cup each balsamic, olive oil and dijon
-1 ts each salt and pepper
-2 tb fresh chopped rosemary
Mix all the ingredients except pork into a thick sauce. Marinate the meat in the sauce for at least 1/2 hour. Roast on 375 until the internal temperature is 125. Remove and let rest for 20 minutes before you slice it, during which the internal temperature will raise to about 140.

Eaten with your fingers the morning after, these short ribs are a surprisingly delicious breakfast.
Leftover Sesame Noodles
These aren't quite as good in the morning because they've been in the fridge all night, and these should really be eaten at room temperature for the flavors to come out.
