Dinner at Home
Fish Curry
A quick, mahi mahi red curry.
-2 packages shirataki noodles, pre boiled for 2 minutes, drained
-1 head brocolli, cut into flowerettes
-1 can chickpeas, drained, 1/2 smashed
-1 large bell pepper, julienned
-1 onion, thinly sliced
-1 head garlic, cloves peeled and minced
-2 ts red curry paste
-1 can coconut milk
-2 mahi mahi filets, cubed
-salt to taste
Sautee the onions, peppers and garlic in a bit of olive oil. Add the chickpeas, noodles, coconut milk and curry paste and simmer for 20 minutes. Season to taste. Add the fish and the brocolli and simmer until fish is flaky.

Late Night Snack at Home
Homemade Noodle Soup with Egg and Parmasean
Giao was sick and wanted some noodles. Since we generally eat low-carb we don't have noodles on hand so Alexis made some from scratch.
Noodles
-1 egg
-1 cup flour
-1/4 ts salt
Mix all ingredients together. Roll very thin. Cut into thin strips. Dry for 30 minutes.
Soup
-4 can chicken stock
-1 recipe noodles (see above)
-2 eggs, lightly beaten
-1/3 cup parmasean
Bring stock to a boil. Add noodles. Boil for 10 minutes. Add eggs and parmasean, stir and cook for 1 minute. Serve

Dinner at Home
Roasted Brocolli
Season with salt and pepper and a bit of olive oil, cover with foil and bake on 400 for 20 minutes.
Caprese Chicken with Artichokes
Since we had lots of basil that we needed to use fast and fresh mozzerella, Alexis decided to make a caprese salad-like chicken. It was quite good.
-4 chicken thighs
-4 thick slices fresh mozzerella
-3 roma tomatos, diced
-1/2 cup diced, marinated artichokes
-1 handful fresh basil, chopped
-salt and pepper to taste
Place chicken in a baking dish and season with salt and pepper. Spread the tomatos and artichokes over the chicken. Cover with foil and bake for 20 minutes. Remove foil and place a slice of mozzerella on each chicken thigh. Place in oven and bake for another 5-10 minutes. Remove from over and sprinkle with basil.

Sausage, Asparagus and Pearl Onions
A sort of Italian inspired stir fry.
-6 pre-cooked chipotle chicken sausages, sliced
-1 lb asparagus, chopped into thirds
-15 pearl onions, halved
-1/2 can chicken broth
Sautee the onions in a bit of olive oil. Add the remaining ingredients and simmer until the broth has evaporated.

Bacon Cheeseburger $8
Expensive, but tasty. Their "special sauce", which seems like thousand island with relish and mustard mixed in is pretty good.
Chopped Salad $5
This was a pretty, but incredibly lackluster, salad. Way too much carrot and red cabbage.
Giao had leftover soup as he still wasn't feeling well.

Giao wasn't feeling well and was in need of some chicken soup.
Chicken Noodle Soup
This soup is made with kelp noodles rather than regular noodles. Comfort food without all of the carbs.

-6 chicken breasts, baked and diced
-1 head napa cabbage, chopped
-1 onion, diced
-1 large carrot, peeled and cut in thin quarter rounds
-1 large turnip, peeled and diced

-8 cans chicken broth
Bake the chicken and dice. Set aside. Sautee the onions, carrot and turnip until beginning to soften. Add the broth and noodles and bring to a boil. When turnips are soft, add the chopped cabbage. When cabbage is soft add the diced chicken, and serve.

Pan Fried Lamb Chops with Green Salad
These lamb chops were seasoned with sald and pepper, and then pan sauteed fo two minutes on each side (bone side and all) for medium-rare. We topped them with leftover roquefort butter.

Tofu with Meat Sauce and Green Beans
This is a superquick meal that is usually made with firm tofu. This time we had a weird tubed tofu that called itself "soft" and was very porous. We literally squeezed the water out. It was pretty good, if a bit strange.

Bacon and Onion Scramble
Bacon and onion cooked until crisp, then drained. Add the bacon and onions back to the pan and add the beaten eggs and stir until firm.

Caprese Salad
Slices of tomato and fresh mozzerella layered on large basil leaves, splashed with balsamic and olive oil and sprinkled with sea salt and pepper.
Baked Sole with Steamed Brocolli
Steaming and baking are quick, hands-off cooking methods that leave your food full of flavor.
Baked Sole:
-6 sole filets
-1 can diced tomatos
-1 can black olives, chopped
-1 smallish onion, diced
-5 cloves garlic, minced
-1/4 cup pine nuts
-1 handful chopped basil
-salt and pepper to taste
Sautee the onions and garlic in a bit of olive oil until beginning to carmelize. Add the tomatos, olices and pine nuts and simmer fro 20 minutes. Season with salt and pepper. Season the fish with salt and pepper and pour the sauce over it. Then bake in a 400 degree oven for 20 minutes. Sprinkle with chopped basil right before serving.

Miso Chili Lemon Chicken Salad
This is one of my favorite chicken salad recipes, as it has a bit of a kick. You can add onions, peppers, or any other veggies. We usually eat it on a bed of fresh greens.
