Lunch from Specialties, San Francisco, CA


Fruit Salad, Regular Salad and Roast Beef Salad
This was a lunch catered in at work and it was ok. Alexis isn't really a fan of Specialties, with their squishy bread and stingy fillings. The fruit was good though.

Chicken (Kelp) Noodle Soup


A hearty chicken noodle soup packed with veggies and fiber-filled kelp noodles.

-4 zuchinni, thinly sliced
-1 onion, diced
-3 carrots, thinly sliced
-8 boneless, skinless chicken thighs, diced
-2 packs kelp noodles, chopped
-6 cans chicken broth
-salt and pepper taste

Sautee the veggies in a bit of oil until beginning to caramelize. Add the noodles and broth and bring to a boil. Simmer until veggies are tender, then add the diced chicken. Simmer a few more minutes and serve.

Composed Salad


Composed Salad
A composed salad is always pretty, and this one was very tasty as well. It was composed of avocado, fresh mozzerella, tomato, pickled asparagus and salami. This is a quick meal that is very satisfying.

Quick Snack from Pizza Hut, Las Vegas, NV

I'm not sure if it was all night carousing, jack and waters, massive gambling losses or the greasy cardboard tasting personal pan pizza that I grabbed before running to the airport that caused my digestive problems on the plane, but I'm leaning toward the 'za.

Baked Trout with Parsley Pesto and Caprese Salad


Standard caprese with fresh basil, tomato, and fresh mozzerella seasoned with salt, pepper, olive oil and balsamic.


Baked Trout
Season with salt and pepper, fill the cavities with lemon slices and top with lemon slices and bake on 375 for about 20 minutes, or until the flesh flakes.


Parsley Pesto
Serve the fish with this sauce, a nice twist on your standard basil pesto.

Parsley Pesto
-3 handfuls fresh parsley
-1/8 cup pine nuts
-juice of 1/2 lemon
-2 cloves garlic
-salt and pepper to taste

Puree all ingredients until smooth.

Indian Lamb Stew with Roasted Asparagus

The was one of Alexis' best creations recently. It's sometimes amaziing what you can come up with when you have ingredients in the fridge that need to be used up. This dish was luscious and tasty, hearty and complex, just delicious.

Indian Lamb Stew
-3 lb leg of lamb, cubed
-1 onion, diced
-8 carrots, peeled and rough chopped
-1 can chickpeas, drained
-1/4 cup brown rice
-4 cans diced tomatoes
-1 can coconut milk
-1 handful chopped cilantro
-4 cans chicken stock or water
-1 ts each: ground ginger, cumin, paprika, cayenne, cardamom, coriander, fennel, cinnamon, turmeric
-1 tb salt

Brown the lamb cubes in a bit of oil in a deep soup pot. Add the onion and carrot and 1/2 the spices and combine. Add the tomatoes, chickpeas, stock or water, rice and the rest of the spices. Bring to a boil, then reduce to a simmer and simmer for about 2 hours. Add the coconut milk and simmer for another hour, stirring occasionally. Add the cilantro and serve.

Lunch from Noodle Asia, Las Vegas, NV

Tony was famished coming off the plane, and wanted some food to tide us before our big steak dinner. Noodle Asia is one of the dining options in the Venetian. We had chose it because we thought it would be cheap. We were wrong.
