Dinner at Home
Taco Casserole
This was a lazy person's dinner idea, but it was actually pretty good.
-8 eggs
-2 cups grated cheese
-1 lb ground beef
-1 onion, diced
-10 baby bell peppers, diced
-5 tomatos, diced
-1 tb cumin
-1 tb garlic powder
-salt and pepper to taste
-1 avocado, diced
-2 tb sour cream per person
-hot sauce to taste
Preheat oven to 350. Brown beef with onions, cumin and garlic powder over medium. Drain excess fat. Mix eggs, 1 and 1/2 cups of the cheese and all other ingredients. Pour into 9x11 baking dish. Bake for approx. 25 minutes. Add the last 1/2 cup cheese on top and bake for another 5 minutes, or until cheese is brown and bubbly. Top each serving with avocado, sour cream and hot sauce.
