Dinner at Home
Shrimp Scampi
This is a low carb version of the standard linguini dish. Broccoli was added to make it a one-dish meal.
-3 packages Shirataki noodles
-1 lb tiget shrimp
-5 cloves garlic, minced
-1/2 onion, minced
-2 cups broccoli flowerettes
-1 handful basil, chopped
-1 cup parmasean
-salt and pepper to taste
-1 cup chicken stock
Sautee the onions and garlic in a bit of olive oil. Add the stock and the pre-boiled noodles. Simmer until most of stock has evaporated. Add the rest of the ingredients, except the cheese and basil. Cover, and simmer until shrimp are just done (about 3 minutes). Add the cheese and the basil, reseason, if necessary, and serve.
