Dinner at Home


Baked Halibut with Homemade Pesto
The fish was cooked perfectly--about 12 minutes on 375.

Pesto
-1 lb fresh basil
-1/2 cup olive oil
-juice of one lemon
-8 cloves garlic, peeled
-1 cup grated parmasean
-salt to taste

Puree the all of the ingredients in a food processor until smooth. Usually pine nuts are included, but I didn't have any, so I didn't use them. I did notice a lack of depth of flavor, but it was still good. The pine nuts serve to mellow the other flavors.
