Dinner at Home
Chupaqueso Taco Salad
This is essentially a standard taco salad, except the taco shell is made from cheese. I used ground turkey rather than ground beef or pork though and I like to tell myself that that offsets the unhealthfulness of eating a bowl made from fried cheese.
Taco Meat
-1 lb ground turkey
-1/2 onion, diced
-5 cloves garlic, minced
-1 tb chili powder
-1 tb cumin
-salt and pepper to taste
Fry in a pan until meat if fully browned and cooked through.
Guacamole
-1 ripe avocado
-1 small tomato, seeded and diced
-juice of 1/2 lime
-3 cloves garlic, minced
-salt to taste
Mash all ingredients thoroughly.
To compose the taco salad place 1 cup fresh spinach in each chupaqueso bowl. Add 3/4 cup of the meat to each. Top with guacamole, sour cream and hot sauce.
