Dinner at Home

I was having trouble deciding whether to go Indian or Asian, so I ended up with a curry that had some typically Asian ingredients, such as hearts of palm and baby corn.


Quick Chicken Curry

-1 onion, halved and sliced
-1 head garlic, cloves peeled and roughly chopped
-1 can hearts of palm, halved and sliced
-1 can baby corn, cut in thirds
-3 cups broccoli
-2 cups cremini mushrooms, halved
-5 small tomatos, roughly chopped
-12 chicken thighs, cubed
-1 can coconut milk
-1 tb curry powder
-1 tb garam masala
-1 tb chili powder
-salt to taste
-juice of 1/2 lemon

Sautee the onions and garlic in 1/2 of the spices until soft. Add the chicken and brown. Add the coconut milk, mushrooms, hearts of palm, baby corn and the rest of the spices and cover. Simmer for 20 minutes. Uncover and add the broccoli and the lemon juice and stir until a thick sauce forms (about 5 minutes). Serve.
