Sausage, Artichoke and Carmelized Onion Quiche
These (crustless) quiches are a great, quick meal.
-4 sausages, cooked and diced
-10 artichoke hearts, diced
-1 onion, diced and carmelized
-8 eggs
-2 cups shredded cheese
-1 cup cream
-salt and pepper to taste
Thoroughly mix all ingredients, pour into greased muffin tins and bake for 15 to 20 minutes on 375, until golden brown.

Cream of Spinach and Turnip Soup with Truffle Oil
-1 lb spinach
-1 large turnip, roughly chopped
-1 onion, roughly chopped
-5 cloves garlic, peeled
-1 cup cream
-6 cups stock
Brown onions and garlic in a bit of olive oil. Add turnips and cook, stirring, for 1 minute. Add stock and bring to a boil. Cover, reduce to a simmer and cook until turnips are soft. Add spinach and cook 3 minutes. Puree and add cream. Serve.
