Green Beans with Garlic and Parmasean
Sautee 1 lb of green beans in a few tb butter and several cloves of roughly chopped garlic. When tender, yet still crisp add parmasean and serve.
Pork Loin with Deconstructed Pesto
This was something I created today, and it ended up quite good.

-2 lb pork loin, but in bite size pieces
-3 large handfuls basil, chopped
-5 small tomatos, diced
-1/2 cup pine nuts
-1/3 cup parmasean
-5 cloves garlic, minced
-juice of 1/2 lemon
-salt and pepper to taste
Cook pork in a saucepan on medium high for several minutes. When liquid exudes, add the garlic, salt and pepper. When pork is almost fully cooked add the remaining ingredients, stir for a few minutes, and serve once a thick sauce is formed.
