Dinner at Home


Strawberry Fennel Salad
Organic strawberries were on sale at Whole Foods for unbelievably cheap--so I bought a whole bunch of them. Their sweetness paired nicely with the anise flavor of fennel.

-1 small fennel bulb, thinly sliced
-1 pint strawberries, halved and thinly sliced
-1/4 onion, thinly sliced
-1/2 yellow bell pepper, thinly sliced
-a couple squeezes of fresh lemon juice

Toss all ingredients and serve.


Bacon, Artichoke and Carmelized Onion Quiche
To make these crustless quiche I use a well buttered muffin tin.

-10 eggs
-1 cup heavy cream
-2 cups grated cheese
-6 strips bacon, cut into 1/2 inch bits (I use kitchen scissors for this task.)
-1 onion, diced
-1 cup marinated artichoke hearts, diced

Pre-heat the oven to 350. Butter a muffin tin, including the top. In a saucepan sautee the bacon and onions until the bacon is crispy and the onions are carmelized. Drain the bacon grease. Stir all ingredients and ladel into the muffin tin. Bake for about 15 minutes, or until tops are golden and a toothpick comes out clean.

Makes 24 quiche.


Strawberries with Greek Yogurt
Greek yogurt is a nice alternative to whipped cream as an accompaniment to fresh strawberries. I add a bit of vanilla and a touch of Splenda to plain, thick Greek yogurt.
