Dinner at Home


Pad Thai
We had all those snack so late in the day that we didn't end up starting dinner until about 10pm. Although there are many separate parts to pad thai, it came together fairly quickly.

-4 packages konnyaku noodles, pre boiled for 2 minutes
-3 eggs
-1 lb shrimp, peeled
-2 large handfuls cilantro, chopped
-1/2 package bean sprouts
-1 package firm tofu, pressed and diced
-1 onion, diced
-10 cloves garlic, minced
-1/4 cup rice vinager
-1/4 cup dark soy sauce
-1/4 cup fish sauce
-1 tb chili garlic sauce
-2 tb oyster sauce
-lemon wedges (for serving)
-3 scallions, thinly sliced

Beat the eggs lightly and cook into a very thin omelette. Cut into strips and set aside. Mix vinager, soy sauce, fish sauce and oyster sauce together. Add 1/3 of the mixture to the diced tofu and sautee in a pan until browned on all sides. Set aside. In a separate pan begin to sautee the onions, garlic and chili sauce. When onions are beginning soften add the noodles and the rest of the sauce. Let simmer for 10 to 15 minutes. Then add the shrimp and when they are almost dont add all of the other components, give it a quick stir, and serve with lemon wedges.
