Dinner at Home


Soy Glazed Mahi Mahi with Warm Sesame Noodle Avocado Salad
This was a nice, light dinner.

-1 Mahi Mahi filet per person
-1/4 cup soy
-2 Tb each of hoisin sauce and oyster sauce
-1 Tb rice vinager

Mix the liquid ingredients thoroughly and marinate the fish in them for a 1/2 hour. Steam the fish over a bed of onions for until just cooked (5-7 minutes).

-4 packages shirataki noodles, boiled for 1 minute
-1 ripe avocado, diced
-1/2 red onion, thinly sliced
-2 tb soy sauce
-2 tb tahini
-3 tb sesame seeds
-juice of 1 lime
-1 packet of Splenda

Thoroughly mix the liquid ingredients and toss with the rest of the ingredients. Serve warm.


Spinach Soup
Silky and very good for you.

-1lb spinach
-1 onion, chopped
-6 cloves garlic, peeled
-1 turnip, peeled and chopped
-2 quarts chicken stock
-pepper to taste

Sautee the onion, garlic and turnip in a bit of olive oil for a couple of minutes. Add the stock and bring to a boil. Reduce heat and simmer until turnips are soft. Add the spinach and simmer for 2 minutes. Turn off heat and puree.
