Dinner at Home
Fennel Roasted Garlic Soup
In order to salvage the too garlicky soup from the other night Alexis added 2 cans of chicken broth and a bulb of fennel, simmered, covered, until tender and pureed. As fennel tends to be fibrous, the puree was subsequently strained and ended up as a smooth and tummy warming soup.
