Dinner at Home


Rosemary Garlic Chicken
Fresh herbs make this dish succulent.

-1 large onion, thinly sliced
-1 head garlic, minced
-4 sprigs fresh rosemary, leaves chopped
-8 chicken thighs
-salt and pepper to taste

Sautee onions and garlic in a bit of olive oil until carmelized. Add the chicken, some salt and pepper and cook, covered, for several minutes. Flip chicken and brown on the other side for a few minutes, still covered. Add rosemary and stir. Serve when chicken is cooked through.


Roasted Turnips, Mushrooms and Fennel
Simple and tasty.

-3 medium turnips, diced
-1 large bulb fennel, diced
-1 lb crimini mushrooms, halved
-1 can chicken broth
-salt and pepper to taste

Throw all ingredients in a large baking dish, cover with foil and bake on 400 for 45 minutes.


Italian Plum Tart with Whipped Cream

Not too sweet and also very easy.

-6-8 Italian plums, pitted and halved
-1 recipe pie crust (1 cup flour and 1 stick of butter, combined with fingers until it resembles cornmeal, add water by the tablespoon until you can form into a cohesive ball)

Press pie crust into greased pie pan. Bake on 400 for 10 minutes. Arrange plum halves face down in the pie shell and bake on 350 until fruit is bubbly and crust is golden brown.
