Dinner at Home
Baked Sole
This is a hearty fish dish that's full of flavor and will really work with any subtly flavored fish.
-5 filets Dover Sole
-1/2 cup mayo
-1/2 cup grated cheese
-1/2 onion, minced
-3 cloves garlic, minced
-1 bell pepper, minced
-1 handful fresh basil
-salt and pepper to taste
-juice of 1/2 lime
Sautee the onions, garlic and bell pepper together until soft. Add the mayo, salt, pepper, cheese and lime juice and remove from heat. Stir thoroughly and spread on top of fish. Bake for 20 minutes at 375, or until fish flakes. Sprinkle fresh basil on top.
