Dinner at Home
Tiger Shrimp, Kelp Noodles and Brocolli
A quick, soupy dish. Kelp noodles are zero carb noodles made from kelp that taste and act a lot like cellophane or mung bean noodles, but you have to simmer them for at least 20 minutes or else they are a bit crunchy.
-1 lb tiger shrimp
-2 packages kelp noodles
-2 heads of broccoli, chopped into flowerettes
-2 tb each soy sauce, oyster sauce, chili-garlic sauce, hoisin sauce
-1 onion, thinly sliced
-8 cloves garlic, thinly sliced
-2 cans chicken broth
Sautee the onions and garlic in all of the sauces for a few minutes. add the noodles and the broth and simmer, covered, for 20 minutes. Add the brocolli and steam, covered, until brocolli is tender and bright green. Add the shrimp and remove from heat. The shrimp will cook in the broth for a few minutes until they are cooked through.
