Chili-Rubbed Baby Back Ribs
This is a favorite weeknight meal of ours because almost all of the cooking is hands off.

Cream of Mushroom Soup
This was Alexis' first attempt at cream of mushroom soup and it was very good.
-1 lb crimini mushrooms
-1/2 onion, chopped
-5 cloves garlic, peeled
-1/2 cup cream
-2 cans broth
-salt and pepper to taste
Sautee the onions, garlic and mushrooms until mushrooms have lost most of their water and everything is nice and soft. Add broth and bring to a boil. Reduce heat and simmer for 10 minutes. Puree with immersion blender. Add cream. Reseason, if necessary.
