Dinner at Home
Giao was finally feeling a bit better so Alexis decided to make a real dinner, with the Vegetable Quinoa Soup as a back up. It turned out Giao was ready for salad, but not for fish...so he had more soup.
Lemon Dijon Baked Mahi Mahi with Simple Lettuce-less Salad
A super quick weeknight meal.
Lemon Dijon Baked Mahi Mahi with Simple Lettuce-less Salad
A super quick weeknight meal.
Fish:
-juice of 1 lemon
-2 tb dijon
-salt and pepper to taste
-2 filets mahi mahi
Combine the lemon juice, dijon, salt and pepper and coat the filets with the mixture. Bake on 400 until fish flakes--10-15 minutes.
Salad:
Equal parts:
-marinated artichoke hearts
-cherry tomatos, halved
-cucumber, peeled and sliced
Sprinkle with blasamic vinager, olive oil, salt and pepper.
