Dinner at Home
Caprese Salad
Slices of tomato and fresh mozzerella layered on large basil leaves, splashed with balsamic and olive oil and sprinkled with sea salt and pepper.
Baked Sole with Steamed Brocolli
Steaming and baking are quick, hands-off cooking methods that leave your food full of flavor.
Baked Sole:
-6 sole filets
-1 can diced tomatos
-1 can black olives, chopped
-1 smallish onion, diced
-5 cloves garlic, minced
-1/4 cup pine nuts
-1 handful chopped basil
-salt and pepper to taste
Sautee the onions and garlic in a bit of olive oil until beginning to carmelize. Add the tomatos, olices and pine nuts and simmer fro 20 minutes. Season with salt and pepper. Season the fish with salt and pepper and pour the sauce over it. Then bake in a 400 degree oven for 20 minutes. Sprinkle with chopped basil right before serving.
