Dinner at Home
Fish Curry
A quick, mahi mahi red curry.
-2 packages shirataki noodles, pre boiled for 2 minutes, drained
-1 head brocolli, cut into flowerettes
-1 can chickpeas, drained, 1/2 smashed
-1 large bell pepper, julienned
-1 onion, thinly sliced
-1 head garlic, cloves peeled and minced
-2 ts red curry paste
-1 can coconut milk
-2 mahi mahi filets, cubed
-salt to taste
Sautee the onions, peppers and garlic in a bit of olive oil. Add the chickpeas, noodles, coconut milk and curry paste and simmer for 20 minutes. Season to taste. Add the fish and the brocolli and simmer until fish is flaky.
