Sausages, Peppers and Onions with Ricotta Gnudi
Sausages, peppers and onions are a nice, easy, weeknight meal, but this time I decided to try these gnudi (I saw a recipe in a food magazine). Unfortunately, I didn't have enough time to let the dough rest properly and then I left the water boil too vigorously, so they kind of fell apart. They tasted good though.
Sausages, Peppers and Onions:
-8 sausages, sliced in rounds (I used pre-cooked chicken jalapeno sausages.)
-4 large bell peppers, sliced
-1 large onion, sliced
-4 cloves garlic, minced
-1 can diced tomatos
-1/2 can chicken stock
-salt and pepper to taste
Sautee the onions, peppers and garlic over low heat until beginning to soften. Add tomatos and chicken stock and simmer, covered for 30 minutes.
Gnudi:
-1 lb ricotta
-3/4 cup soy flour
-1 tb garlic powder
-1 ts salt
-1 ts pepper
-1 egg
Thoroughly mix all ingredients and let the dough rest in the fridge for 1-24 hours. Roll into balls and boil in salted water for 8 minutes. Drain and add the gnudi to the onions, peppers and sausage mixture. The sauce will coat the gnudi nicely.
