Lunch at Work


Dijon Chicken Salad with Greens
A nice, filling lunch. The chicken is salty enough on its own, so there's no need to add extra.

Chicken Salad:
-1 rotisserie chicken, shredded
-1/2 cup mayo
-3 tb dijon
-juice of 1/2 lemon
-1 packet splenda
-1/2 onion, diced

Stir all of the ingredients except the chicken and onion together to make a dressing, then stir everything together. Serve over greens.
