Playoff Party at Home
We had another playoff party...
Spinach Dip
A nice easy, spinach dip.
Shrimp Gumbo
In honor of New Orleans I made shrimp gumbo, something I had never made before. It turned out quite well.
Spinach Dip
A nice easy, spinach dip.
-1 cup sour cream
-1 cup cream cheese
-3 cups spinach blanched
-1/2 red onion, diced
-1 cup marinated artichokes, chopped
-salt, pepper and garlic powder to taste
Sautee onions in a bit of olive oil. When onions are beginning to carmelize. Add cream cheese and turn the heat to low. Add the rest of the ingredients and stir until all of the ingredients are mixed through.

Shrimp Gumbo

-2 lbs shrimp, peeled and cleaned
-6 hot links, halved and cut into 1/4 inch half rounds
-1 onion, diced
-5 stalks celery, diced
-2 bell peppers, diced
-1/2 lb okra, trimmed and cut in 1/4" rounds
-4 can diced tomatos
-2 tb Italian seasoning
-2 bay leaves
-2 can chicken broth
-1 tb cayenne
-salt to taste
-2 tb flour
-3 tb butter
Make a roux with the butter and flour. When it is a dark red, but not burning, add the onion, celery and bell pepper. Cook for a few more minutes. Add the tomatos, seasonings, broth and sausage and simmer for an hour. Add okra and simmer until tender. Add the shrimp, cook for about 3 more minutes and serve either alone or with rice.
