Dinner at Home
Baked Trout
A quick, healthy meal. These trouts are stuffed with lemon slices and basil and seasoned with salt and pepper, then they are baked for about 20 minutes on 375.
Spinach Gratin
A nice, unhealthy accompaniment to baked fish.
-2 lbs spinach
-1/2 onion, diced
-5 cloves garlic, minced
-1 1/2 cup grated cheese
-1/4 ts nutmeg
-salt and pepper to taste
Blanch the spinach and squeeze out as much water as possible. Chop and put in a large mixing bowl. Sautee the onions and garlic in a bit of olive oil until carmelized. Put into the bowl with the spinach. Add the nutmeg, salt, pepper and 1 cup of the grated cheese to the bowl and mix thoroughly. Put the mixture in a greased casserole and sprinkle on the rest of the cheese on top. Cover with foil and bake on 375 for about 30 minutes. Remove the foil and bake until cheese is golden and bubbly.
