Dinner at Home


Miso Lime Salmon with Quick Pickled Cucumbers
Light and healthy.

Miso Lime Salmon:
-1 large salmon filet
-2 tb miso
-juice of 1 lime
-1/2 cup water
-1 packet splenda
-1 ts chili powder

Preheat oven to 375. Heat all ingredients other than salmon in a small sauce pan. Stirring constantly over low heat allow the mixture to reduce by about 1/3. Put salmon in a baking dish and pour the mixture over the salmon. Cover tightly with foil and bake for 10 minutes, or until salmon is just cooked.

Quick Pickled Cucumbers
-6 baby cucumbers, peeled, seeded and thinly sliced
-2 tb rice vinegar
-1 ts chili powder
-1 packet Splenda
-1 ts black sesame seeds

In a bowl combine the vinegar, chili powder and splenda. Stir in the cucumber. Stir a bit every few minutes, leaving the cucumbers in the vinegar for about 1/2 hour. Drain the vinegar and mix in the black sesame seeds.
