Late Lunch at Home


Low Carb Chicken Noodle Soup
A tasty and filling without the carbs.

-1/2 rotisserie chicken, diced
-2 carrots, peeled and diced
-1 turnip, peeled and diced
-3 stalks celery, diced
-1/2 onion, diced
-1 package kelp noodles
-4 cans chicken broth
-pepper to taste

Saute the onions, carrots, turnip and celery in a soup pot over medium heat. When veggies are carmelized add the broth and the noodles and bring to a boil. Reduce heat, cover and simmer until veggies are soft. Add diced chicken and serve.
