Dinner at Home
A tasty dinner at home:
Creamy Paprika Chicken
A tangy, creamy take on a Hungarian favorite.

A hearty, lettuceless salad dressed in balsamic vinagrette.
Creamy Paprika Chicken
A tangy, creamy take on a Hungarian favorite.
-8 chicken thighs, cut in bite size pieces
-1/1 onion, diced
-5 cloves garlic, minced
-1 tb paprika
-salt and pepper to taste
-1/2 cup Greek yogurt (I use Fage brand)
Sautee onions and garlic in a bit of olive oil until beginning to carmelize. Add the chicken and seasonings and brown. Cover and cook through. Remove from heat. Add yogurt and stir to combine.

-8 spears pickled asparagus, cut in 1 inch pieces
-1 cup marinated artichoke hearts, chopped
-1 bell pepper, diced
-1/3 cup balsamic vinagrette (1 part dijon, 2 parts olive oil and 2 parts balsamic vinegar)
Coat all ingredients with vinagrette.
