Dinner at Home
-2 lb pork loin, cut in cubes
-15 cherry tomatos, halved
-1/4 cup pine nuts
-2 large bunches basil leaves, leaves removed
-juice of 1 lemon
-1/8 cup olive oil
-1/4 cup grated parmasean
-salt and pepper to taste
Puree basil, lemon juice, olive oil and parmasean in a food processor until smooth.Sautee pork in a bit of olive oil until browned. Cover and cook until cooked through. Add tomatos and pesto puree and stir to combine. Remove from heat and serve.

Roasted Asparagus with Truffle Oil
A simple, tasty side dish. The asparagus spears are roasted on 350 until tender, then seasoned with salt, pepper and truffle oil.

-1 cup heavy cream
-1 packet Splenda
-1 ts vanilla
-2 tb cocoa powder
Whip all ingredients until stiff.
