Lunch at Home

Meatballs in Romesco Sauce
We had so many meatballs leftover in the freezer from the tapas party. It was time to cook some up with a hearty sauce.
-6 tomatos, halved
-1 red pepper
-1/2 cup almonds
-1/2 cup pine nuts
-12 cloves garlic, peeled
-1/4 red wine vinegar
-1 tb chili powder
-salt to taste
-1/4 cup olive oil
Roast the tomatos, pepper, almonds, pine nuts and garlic on a cookie sheet on 450 for 12 minutes. Then throw everything in the food processor with the chili powder, olive oil, vinegar and salt. Puree until smooth. That's it.
