Brunch at Home


Miso-Lemon Chicken Salad
Served over spinach this makes a great meal any time of the day.

-1 rotisserie chicken, shredded
-1 bell pepper, diced
-1/2 onion, diced
-1.2 cup mayo
-2 tb red miso
-1 tb rooster sauce
-juice of 1 lemon
-1 packet Splenda

Mix the mayo, lemon juice, rooster sauce, miso and Splenda together to form a thick sauce. Pour over the rest of the ingredients and mix thoroughly. Serve over greens.
