Dinner at Home
Spinach Curry with Toasted Walnuts and Fresh Mozzerella
This recipe was a liberal twist on a curry from Vij's cookbook, as walnuts and mozzerella are hardly Indian ingredients. It was very good.
-2 lbs spinach
-1 handful walnuts, toasted
-1 ball fresh mozzerella, diced
-3 cups fresh tomatos, pureed
-1 can coconut milk
-1/2 ts turmeric
-1 tb salt
-1 tb cumin
-1 ts cayenne
-1 1/2 tb mustard seeds
-canola oil
Sautee the cumin in the oil for a minute. Then add the tomato puree and the rest of the spices and simmer for 5 minutes. Add the coconut milk and simmer until reduced by half. Add the spinach and simmer a few more minutes. Place in a large dish and sprinkle with toasted walnuts and mozzerella.

Vij's Lamb Popsicles
I've made these 3 times, and for some reason, the last 2 times, the sauce broke...why, I have no idea.
