Lunch at Manhattan Hub, San Francisco, CA
Alexis decided to bring her lunch, which she made at home, to the outdoor seating in front of Manhatten Hub...
Pesto Chicken Salad on Mixed Greens
A tasty use of a Costco rotisserie chicken. Also, Alexis had a bunch of basil that was going to go bad if she didn't do anything with it, so pesto was the obvious option. Although you could buy prepared pesto, it is easy and cheap to make at home, as Alexis does.

Pesto Chicken Salad on Mixed Greens
A tasty use of a Costco rotisserie chicken. Also, Alexis had a bunch of basil that was going to go bad if she didn't do anything with it, so pesto was the obvious option. Although you could buy prepared pesto, it is easy and cheap to make at home, as Alexis does.
Chicken Salad:
-1 rotisserie chicken, shredded
-1 bell pepper, diced
-1/2 cup mayo
-1/3 cup pesto (recipe below)
Mix the mayo and pesto until smooth, then mix thoroughly with the other ingredients. Serve on a bed of mixed greens or spinach.
Pest0:
-several large handfuls of fresh basil leaves
-juice of 2 lemons
-1/4 cup pine nuts
-1/4 cup grated parmasean
-1/4 cup olive oil
-salt and pepper to taste
Puree in a food processor and adjust ingredients to your own taste.
