Breakfast at Home


Bacon, Egg and Cheese Low Carb Breakfast Burrito
The technique we use is to cook 4 slices of bacon on paper towels on a plate in the microwave for 5 minutes. This makes the slices extra crispy and never burnt, and also wicks away the grease. While the bacon is in the microwave, scramble 3 eggs. Then place 2 slices of cooked bacon and 1/2 the eggs in a line down the center of each low carb tortilla. Sprinkle with cheese, wrap and place seam-down in a pan on medium. Cook for a minute or so, until the cheese has sealed the seam. Flip and cook for another minute.
