Dinner at Home
Diced Chicken Lettuce Cups
Usually we make these with ground turkey, but today we didn't have any. And Alexis found out that dicing raw chicken is a real pain. However, these were pretty darn good.
-8 chicken thighs, diced
-2 chicken breasts, diced
-1/2 cup roasted, salted peanuts
-1 bell pepper, diced
-1 onion, diced
-1 can water chestnuts, chopped
-10 cloves garlic, minced
-1 handful fresh cilantro, chopped
-juice of 1/2 lemon
-2 tb chili garlic sauce
-1 tb oyster sauce
-2 tb soy sauce
-1 tb hoisan sauce
-2 tb pickled ginger, minced
Sautee the water chestnuts, bell pepper, onions, garlic and pickled ginger in a bit of olive oil and the 1/2 the soy sauce. When soft, add the diced chicken and all of the sauces and sautee, stirring frequently, until chicken is cooked through. Then add the lemon juice, the cilantro and the peanuts, stir and spoon into iceberg lettuce leaves.
