Dinner at Home
Shrimp and Squash Coconut Curry
-1 lb shrimp
-3 packages shirataki noodles, boiled for 2 minutes and drained
-1/4 cup fish sauce
-1 tb thai green chili paste
-1 can coconut milk
-1 can chicken broth
-1/2 onion, thinly sliced
-juice of 1/2 lime
-5 patty-pan squash, cut in eighths
-8 cloves garlic, minced
-3 packages shirataki noodles, boiled for 2 minutes and drained
-1/4 cup fish sauce
-1 tb thai green chili paste
-1 can coconut milk
-1 can chicken broth
-1/2 onion, thinly sliced
-juice of 1/2 lime
-5 patty-pan squash, cut in eighths
-8 cloves garlic, minced
Sautee the onions and garlic in a bit of olive oil. When beginning to brown, add the coconut milk, chili paste and chicken broth and bring to a boil. Reduce to a sinner and add the noodles. Add the squash and simmer until tender, about 15 minutes. Add the fish sauce, lime juice and shrimp and cook until shrimp are tender, about 1 or 2 minutes. Add the cilantro and serve.
