Lunch at Work
Salmon Salad
A tasty, quick, weekday lunch.
-3 cans salmon, drained
-3 tb mayo
-juice of 1/2 lemon
-2 tb capers
-1/2 onion, diced
-pepper to taste
Mix all ingredients together thoroughly and eat alone, in a sandwich, or over fresh greens. You don't need to add salt because the capers impart their saltiness to the salmon already.
