Tri Tip with Quinoa and Spinach

A well balanced meal. Protein, veggies and whole grains.

-1 lb tri tip
-2 tb olive oil
-1 ts chili powder
-1 ts garlic powder
-2 ts salt

Marinate the tri tip in a mixture of all of the other ingredients. Pan fry on all sides for a few minutes, until medium rare. Let the meat rest for 10 minutes and then slice.

-1 cup quinoa
-1 lb spinach
-1/2 onion, sliced
-salt and pepper to taste

Cook the quinoa as you would rice. While the quinoa is cooking, sautee the onions until caramelized, then add the spinach and sautee until wilted. Mix the onions and spinach into the quinoa and season to taste.
