Dinner at Home
Low Carb Shepherd's Pie
Alexis decided to give an old casserole a new twist by replacing the classic potatos with her cheesy pureed cauliflour. It was filling and tasty.
Low Carb Shepherd's Pie:
-1 recipe Cheesy Pureed Cauliflour
-1 lb ground turkey
-4 medium summer squash, diced
-1 onion, diced
-8 cloves garlic, minced
-1 tb each garlic powder, paprika, chili powder, oregano, parsley
-salt and pepper to taste
-1 cup grated cheese
Pre-heat oven to 400. Sautee the onions and the garlic in a bit of olive oil until soft. Add turkey and seasonings and brown, stirring constantly. When turkey is mostly cooked (not pink) add the squash and sautee until the squash is soft and the liquid has evaporated. Pour the mixture into a deep casserole. Pour the cauliflour puree on top. Bake for 20 minutes. Sprinkle the cheese on top and bake until the crust is bubbly and golden.
