Dinner at Home
Since we had such nice tuna, we decided to have a fresh Salade Nicoise, which can be made with canned tuna, but is always better with seared fresh tuna. We also had some brocolli that was about to go bad, so we made some soup.
Brocolli and Cheese Soup
As a kid I loved the Campbell's version of this soup, which was basically a cheese flavored thick soup with a few bits of brocolli floating in it. This is the more adult version that favors the brocolli a bit more than the cheese, and is a whole lot better for you.
Salade Nicoise
This is a classic composed salad.

-1 lb brocolli flowerettes
-1 cup grated cheese
-1/2 onion, chopped
-5 cloves garlic, peeled
-4 cans stock
Sautee the onions and garlic in a bit of olive oil until beginning to carmelize. Add the stock and bring to a boil. Add the brocolli and simmer until soft (but still bright green). Puree with immersion blender. Add cheese and thoroughly combine.

-cherry tomatos
-marinated artichoke hearts
-onions
-olives
-sauteed green beans
-tuna, seared on all 4 sides, cold in the middle, thinly sliced
Drizle with balsamic vinagrette (1 part dijon, 2 parts balsamic, 2 parts oil).
