Dinner at Alexis' Parents' House, Bothell, WA

Brocollini with Garlic
A simple, tasty side dish.

-3 bunches brocollini, cut in thirds
-3 cloves garlic, cut in super-thin slices
-1 tb olive oil
-salt and pepper to taste

Sautee the garlic slices in olive oil until just brown and crispy and set aside. Sautee the brocollini in the same pan until tender, stirring frequently. Sprinkle the garlic chips over the top of the brocollini and serve.

Simple Mixed Green Salad

Caramelized Onion Mashed Potatoes
Alexis little sister made these, but we think she just added a bunch of caramelized onion to the mashed potatoes.

Steamed Lamb
This was perhaps one of the weirdest methods of cooking that we've ever tried. Alexis' sister got it from a Moroccan cookbook. Who knew that you could steam meat for a tender, falling apart roast.

-1 boneless leg of lamb
-6 sprigs parsley
-4 cloves minced garlic
-salt and pepper to taste
-1 tb cumin
-1 pinch of saffron

Rub the lamb with all of the spices and the garlic and place the parsley on the lamb. Wrap the lamb in cheese cloth and place in a colander inside of a pot with about an inch of water in it. Bring the water to a boil and cover the whole contraption with a tight fitting lid or foil to create a tight seal. Steam the lamb for about 2.5 hours. Remove the lamb and quickly sear on all sides for a nicer appearance. Then serve.

The Gravy
This was basically just the boiled down water and lamb juices and fat, but it was delicious.

Molasses Bread with Marscapone Cheese
Yum. This is a tender, flavorful bread that Alexis remembers from her childhood. It is sweet but not cloying and totally delicious when spread with marscapone.

Garlic Shrimp and Sauteed Brocollini
Another quick, weeknight meal. And since shrimp thaw so quickly in a bowl of water, this is a great option if you forget to take something out of the freezer earlier in the day.

Garlic Shrimp:
-1 lb shrimp
-1 head garlic, cloves peeled and minced
-1 handful cilantro, chopped
-juice of 1/2 lemon
-salt and pepper to taste

Sautee the garlic in a bit of olive oil until beginning to brown. Add the shrimp and cook until pink, about 3 minutes. Add the rest of the ingredients, stir and serve.

Sauteed Brocollini:
-2 bunches brocollini, cut in thirds
-3 cloves garlic, minced
-salt to taste

Sautee the garlic in a bit of olive oil until beginning to brown. Add the brocollini, sautee a few minutes, then cover for about 5 minutes, shaking occasionally. Season, cook until tender and serve.

Dinner at Home

Miso Soup
In an attempt to creat a lighter soup, Alexis omitted the seaweed, and Giao thought the soup was fairly flavorless as a result. Alexis liked it though.

Chili Rubbed Baby Back Ribs
Parboiled for 15 minutes, then cooked in the Ron Popeil "Set It and Forget It' Showtime Rotisserie Grill for 38 minutes. The very best as-seen-on-tv product out there, as far as we are concerned. Click here for our no-fail wet rub.

Brocollini with Garlic and Lemon
Brocollini is a more intense, sweeter, more tender cousin to brocolli. With crispy garlic and a sprtiz of lemon juice, these brocollini came to life and were very tasty.

Breakfast at Home

Brocollini Scramble and Bacon
Leftover brocollini mixed into scrambled eggs. We like to cook our bacon in the microwave both for ease and because the paper towels wick away all of the grease.

Dinner at Home

Since we had such nice tuna, we decided to have a fresh Salade Nicoise, which can be made with canned tuna, but is always better with seared fresh tuna. We also had some brocolli that was about to go bad, so we made some soup.

Brocolli and Cheese Soup
As a kid I loved the Campbell's version of this soup, which was basically a cheese flavored thick soup with a few bits of brocolli floating in it. This is the more adult version that favors the brocolli a bit more than the cheese, and is a whole lot better for you.

-1 lb brocolli flowerettes
-1 cup grated cheese
-1/2 onion, chopped
-5 cloves garlic, peeled
-4 cans stock

Sautee the onions and garlic in a bit of olive oil until beginning to carmelize. Add the stock and bring to a boil. Add the brocolli and simmer until soft (but still bright green). Puree with immersion blender. Add cheese and thoroughly combine.

Salade Nicoise
This is a classic composed salad.

Arrange the following ingredients on a bed of mixed greens:
-cherry tomatos
-marinated artichoke hearts
-onions
-olives
-sauteed green beans
-tuna, seared on all 4 sides, cold in the middle, thinly sliced
Drizle with balsamic vinagrette (1 part dijon, 2 parts balsamic, 2 parts oil).

Pan Fried Lamb Chops with Garlic-Lime Brocollini
Brocollini is a great alternative to brocolli, a bit sweeter and thinner, so easier to sautee in a pan.

Lamb Chops
-garlic powder, cumin, salt and pepper
-2 lamb chops per person

Sprinkle all fo the spices on all surfaces of the lamb chops. Heat a bit of oil and butter in a pan on medium high. When pan is sufficiently hot cook the lamb chops for two minutes on each and every side (for medium rare).

Garlic-Lime Brocollini
-2 bunches brocollini, cut in thirds
-10 cloves garlic, minced
-salt and pepper to taste
-lime juice to taste

Sautee garlic over low heat until brown and crispy. Add the brocollini, season and turn heat to medium. Stir frequently until brocollini is tender. Spritz with lime juice and serve.
