Dinner at Home
After our enormous Dim Sum lunch, we needed only a small dinner. We had a bunch of tofu that will be expiring soon, so Alexis whipped up a quick tofu and veggie simmer. It would have been a sirfry, but it is a little hard to keep silken tofu together while stirfrying.

Tofu, Brocolli, Enoki and Scallion Simmer
-2 blocks silken tofu, broken into large chunks
-1 head brocolli, cut into flowerettes
-1 package enoki mushrooms, separated
-10 scallions, chopped
-2 tb soy sauce
-1 tb rice vinager
-1 tb rooster sauce
-1 tb hoisin
-1 knob of ginger, grated
Mix all the liquids and the grated ginger into a marinade. Marinate the tofu in the mixture for 1 hour. Simmer the tofu for 10 minutes, covered. Add veggies and simmer until veggies are tender.
