Smoked Tofu with Meat Sauce and Agretti

This week we had a lot of veggies in our CSA box that we'd never heard of, including agretti, a particularly delicious and very odd green vegetable. It most closely resembled something called "salicorns" that Alexis had had pickled in France several years ago. Agretti is sort of like a very thick and crunchy grass, that is slightly salty when raw.

-1 block smoked tofu
-1 lb ground turkey
-1 lb agretti, "bulbs" trimmed
-4 tb black bean garlic sauce
-2 tb chili garlic sauce

Brown the turkey. Add the sauces and tofu and cook until turkey is done. Add the agretti, cover, and simmer for a couple minutes. Remove cover, stir and serve when agretti is tender.

Dinner at Home

Turkey, Tofu and Greens in Chili Black Bean Sauce
A quick stirfry with ground meat, silken tofu and some unknown greens from the Sunset Super, which were slightly bitter, but in a good way.

-1 lb ground turkey
-1 block silken tofu, diced
-1 1/2 lbs greens
-3 tb dark soy sauce
-2 tb oyster sauce
-3 tb chili black bean sauce
-squeeze of fresh lemon
-1 packet Splenda

Add the soy sauce to the turkey and brown the meat. Add the the tofu, the oyster sauce, the chili black bean sauce and the Splenda and stir to combine. Add the greens and cover, allowing them to wilt considerably. Then remove the lid and sautee until the most of the licuid has evaporated and a thick sauce has formed. Spritz with lemon and serve.

Dinner at Home

Tofu with Meat Sauce and Green Beans
This is a superquick meal that is usually made with firm tofu. This time we had a weird tubed tofu that called itself "soft" and was very porous. We literally squeezed the water out. It was pretty good, if a bit strange.

Dinner at Home

Pad Thai
Not entirely traditional, but tasty nonetheless.

-1 package bean sprouts
-4 packages fettucini style shirataki noodles
-5 scallions, chopped
-4 eggs
-1 block firm tofu, cubed
-1 lb shrimp
-1/2 cup peanuts, chopped
-1 large handful basil, chopped
-3 tb rice vinegar
-2 tb rice wine
-3 tb soy sauce
-2 tb oyster sauce
-2 tb hoisin sauce
-2 tb chili garlic sauce
-10 cloves garlic, minced
-1 lime, cut in wedges

Mix the vinegar, rice wine, hoisin, and chili garlic sauce and marinate the tofu cubes in the mixture. Drain the marinade and reserve for later. Fry up the tofu until crisp and set aside.
Boil the noodles for 2 minutes, drain and set aside. Beat the eggs and make a very thin omelette. Cut into strips and set aside. Sautee the shrimp in the oyster sauce until almost done and set aside. Sautee the garlic in a large pan. Add the leftover marinade and the noodles to the pan and sautee until noodles are full coated. Add the tofu, the omelette strips, the shrimp, the bean sprouts and the peanuts and stir. Garnish with lime and basil.

Dinner at Home

After our enormous Dim Sum lunch, we needed only a small dinner. We had a bunch of tofu that will be expiring soon, so Alexis whipped up a quick tofu and veggie simmer. It would have been a sirfry, but it is a little hard to keep silken tofu together while stirfrying.

Tofu, Brocolli, Enoki and Scallion Simmer

-2 blocks silken tofu, broken into large chunks
-1 head brocolli, cut into flowerettes
-1 package enoki mushrooms, separated
-10 scallions, chopped
-2 tb soy sauce
-1 tb rice vinager
-1 tb rooster sauce
-1 tb hoisin
-1 knob of ginger, grated

Mix all the liquids and the grated ginger into a marinade. Marinate the tofu in the mixture for 1 hour. Simmer the tofu for 10 minutes, covered. Add veggies and simmer until veggies are tender.

Dinner at Home

Mixed Greens with Balsamic Vinagrette
My standard viagrette recipe is 1 part each of olive oil, balsamic viagrette and dijon mustard. You can swap the vinagers and mustards (or other emulsifying agent) at will to creat different flavors.

Compound Caper and Lime Butter
A couple tablespoons of capers and the juice of 1/2 lime are mixed into a 1/2 stick of softened butter to create this tasty compound butter to slather on the fish.

Pan Fried Dover Sole
Lightly seasoned with salt and pepper, the fish is sauteed in a bit of olive oil until tender and barely golden on both sides. Use medium heat to avoid the fish sticking to the pan.

Miso Soup
A nice accompaniment to fish.
