Roasted Brocolli
Season with salt and pepper and a bit of olive oil, cover with foil and bake on 400 for 20 minutes.

Caprese Chicken with Artichokes
Since we had lots of basil that we needed to use fast and fresh mozzerella, Alexis decided to make a caprese salad-like chicken. It was quite good.
-4 chicken thighs
-4 thick slices fresh mozzerella
-3 roma tomatos, diced
-1/2 cup diced, marinated artichokes
-1 handful fresh basil, chopped
-salt and pepper to taste
Place chicken in a baking dish and season with salt and pepper. Spread the tomatos and artichokes over the chicken. Cover with foil and bake for 20 minutes. Remove foil and place a slice of mozzerella on each chicken thigh. Place in oven and bake for another 5-10 minutes. Remove from over and sprinkle with basil.
