Hot Pot Soup
We made our standard hot pot for dinner, and then we made a soup by adding the rest of the broccolli, some rainbow chard, some thin noodles and an egg.

Quick Sausage and Veggie Stew
Sausage and Veggies Stew
This was a very quick weeknight meal.
-8 sausages, thinly sliced
-2 large heads broccoli, chopped
-1 handful pinenuts
-1 onion, sliced
-2 cans tomatoes
Sautee the onions until translucent. Add everything else and cover. Steam for a few minutes. Then remove cover and sautee until desired moisture level.

Chicken with Agretti and Brocolli in a Turmeric Fenugreek Cream Sauce
We had a bunch of leftover sauce from last night's dinner, so we made a quick sort of Indian stir fry with it.
-8 chicken thighs, diced
-1 bunch agretti, trimmed
-2 heads brocolli, chopped
-1/2 onion, thinly sliced
Brown the chicken in a pan. Add the veggies and cover. Steam for a few minutes. When veggies are tender, add the sauce. Stir to combine and serve.

These were rubbed with a spice mixture we bought in Guadaloupe, then pan fried in butter and oil for 2 minutes on all 5 sides (for medium rare).

Soup for a Sick Giao

Giao was feeling sick and Alexis had failed at an attempt at brown rice congee the other day (she added salt). So, she heated up the congee, added some water and steamed broccoli and pureed the mixture for a soup fit for a sick person.

Mustard Sausage with Cheesy Roasted Brocolli
This is a great recipe for lunch or dinner, and reheats well.
-2 tb whole grain mustard
-2 tb apple cider vinegar
-1 onion, thinly sliced
Sautee the onion over medium heat until almost caramelized. Add the sausage and break into bits with a wooden spoon, while browning. Add the mustard and vinegar, mixed together, to the sausage and onions and continue cooking until done.

Fenugreek and Mustard Crusted Pork Chop with Parsley Pesto and Roasted Brocolli with Cheese
You can't get much more classic than meat and veggies. This is an easy, tasty and quick meal to make when you don't have much time but want something hearty.
-1 head of broccoli, cut in flowerettes
-1 cup shredded sharp cheddar (we like Dubliner)
Season broccoli with salt and pepper and bake, covered on 350 for about 20 minutes, until tender. Sprinkle with cheese then bake uncovered for about 5-7 minutes, until cheese is beginning to brown.
Fenugreek and Mustard Crusted Pork Chop
-1 ts ground fenugreek seed (also called methi)
-1 ts ground mustard seed
-1 ts ground pepper
-1 ts salt
-2, 1 inch-thick pork chops
Mix all of the spices together to create a dry rub. Pat the pork chop dry and season with the spice mixture. Pan fry in a mixture of butter and olive oil for about 7 minutes on each side, until rosy pink, but done in the middle.

Sausage, Squash and Brocolli Mash
Leftovers are not usually great, in and of themselves. However, when you can reinvent them by adding a few other ingredients, it can be very satisfying. We had a bunch of leftover Warm, Spiced Squash Salad and to that we added some sauteed onions, steamed brocolli and chicken sausage. We heated it all through on the stove and had a great, healthy meal made from leftovers and what we had in the fridge/freezer.

Snacks for Dinner
-1 can garbonzo beans, drained
-1/2 cup olive oil
-juice of 1large lemon
-6-8 cloves garlic
-1/4 cup tahini
-salt to taste
Puree all ingredients and use as a dip, spread or condiment for almost anything.

Zucchini and Broccoli Stalk Sticks
We often use zucchini sticks for dipping but we had some thick broccoli stalks in the fridge so we peeled them on chopped them up too. They were surprisingly good--crunchy and mild in flavor.

Classic Chicken Divan (recipe)

Chicken Divan
Adapted from Saveur magazine. Serves 5 hungry people.
-2 tbsp olive oil
-3 heads broccoli, cut into flowerettes
-1 stick butter
-1/4 cup soy flour
-1/4 cup regular flour
-2 can chicken stock
-2 cups half and half
-6 tbsp dry vermouth
-1 cup grated parmasean
-1 tsp nutmeg
-salt and pepper to taste
Season the chicken breasts with salt and pepper and cook in the olive oil over medium high heat for about 10 minutes, until not quite cooked through. Make sure to turn so that both sides are evenly browned. The recipe in Saveur called for cutting the chicken into strips after sauteeing, but because you later bake the whole dish, this led to chicken that was a tad too dry. Next time, I'd leave the chicken breasts whole. Whatever you do, set the chicken aside to rest. Meanwhile, boil the broccoli for about 1 minute, drain and set aside. In a saucepan melt the butter and then mix in the soy and wheat flours whisking continually for 2 minutes. Add the half and half and chicken stock and simmer until the sauce is very thick, stirring often. This will take about 20 minutes, but if 20 minutes has passed and it's still not "really thick", keep going. When sauce is at desired thickness, add the vermouth, the nutmeg and 1/2 the parmasean. Season with salt and pepper and stir to combine. In the 9x13 greased baking dish, dump in the broccoli. Then place the chicken breasts on top and finally pour the cream sauce over the whole dish evenly. Sprinkle the rest of the parmasean on top and bake on 350 for about 20 minutes, until the top is golden and the sauce is bubbly.

Low Carb Cracker with Brie and Smoked Trout
Giao needed a post-workout, protein-rich snack, and this quick fix certainly sufficed.

Brocolli-Cheese Soup
An old standby and a great way to use a large amount of brocolli that only has a few days left before it will spoil.
-4 cloves garlic, peeled
-1 lb brocolli, roughly chopped
-4 cans chicken broth
-pepper to taste
-1 cup grated sharp hard cheese
Sautee the onions and garlic in a bit of olive oil. When beginning to brown, add the broth and bring to a boil. Add the brocolli and simmer until tender, but still bright green. Puree with an immersion blender until smooth. Add the cheese and stir until combined. Remove from heat.

Brocolli with Cheese and Sausage Sautee
A simple weeknight meal that's ready in under half an hour. The brocolli dish is one of our favorites.
-1 lb brocolli flowerettes
-1 cup shredded cheese
Bake the brocolli in a covered dish for about 20 minutes, on 400. Remove cover, sprinkle with cheese and put back in oven till the cheese is bubbly.
Sausage Sautee:
-6 chicken sausages (pre-cooked), sliced in rounds
-1/4 cup pine nuts
-3 large tomatos, diced
-1/2 onion, thinly sliced
Sautee the onions until beginning to soften. Add the sausages and pine nuts and cook until sausage slices begin to brown. Add the tomatos and cook until soft, just a few more minutes.

Whole Baked Trout
This trout was stuffed with a few lemon slices and seasoned with salt and pepper, then baked on 375 for about 10 to 15 minutes.

Roasted Brocolli with Parmasean
Roast the brocolli, covered on 375 for about 25 minutes. Then remove the covering, sprinkle with parmasean, then bake for another few minutes, until the cheese beings to brown.

Fresh Pesto
Pesto is a great flavor booster and this was delicious when slathered all over the freshly baked trout.
-3 handfuls fresh basil
-juice of 1/2 lemon
-1/8 cup parmasean
-1/8 cup pine nuts
-1/4 cup olive oil
-salt to taste
Puree.

Chili Pepper, Brocolli, Onion, Bacon, Egg and Cheese Breakfast Burrito
On the weekend we have a little more time to put together a breakfast with a few more ingredients. For this one we sauteed diced chili pepper, onions and brocolli until all were tender, then scrambled with some eggs and rolled it all up with bacon in a low carb tortilla, then sealed it up with cheese in a frying pan.

Caprese Salad
Will we ever get sick of this? I don't think so. Fresh basil, fresh tomato and fresh mozzerella layered on a plate, then drizzeled with olive oil and balsamic vinegar and seasoned with sea salt and pepper. Perfect little bites that explode with flavor in your mouth.

We got home rather late and Alexis had thawed some chicken breasts intending to make Chicken Divan. However, we were missing some key ingredients and the stores were closed, so she decided to make something else that was composed of chicken and brocolli.
-2 chicken breasts
-8 cloves garlic, minced
-salt and peper to taste
-10 sage leaves, minced
-juice of 1/2 lemon
Sautee the garlic in a bit of olive oil until just beginning to color. Place the seasoned chicken breasts on top of the garlic in the pan and cover. Cook for a few minutes, then flip the chicken. Cook until tender. Sprinkle the sage and the lemon juice over the breasts just before serving.

Chopped Salad with Balsamic Vinegarette
A nice change to lettuce based salads, but using the same dressing.
-6 small tomatos, diced
-4 small cucumbers, peeled and diced
-2 bell peppers, diced
-1 handful fresh cilantro
-equal parts olive oil, balsamic vinegar, dijon mustard, whisked
Mix all ingredients and pour the dressing over it. Stir to coat.

Brocolli and Cheese Soup
A tasty, thick soup with a cheesy kick.
-1 lb brocolli, cut in chunks
-5 garlic cloves, peeled
-1/2 onion, roughly chopped
-1 and 1/2 cups grated sharp cheddar, or other cheese with character
-pepper to taste
Sautee the onions and garlic in a bit of olive oil until beginning to brown. Add the broth and bring to a boil. Add the brocolli, cover and simmer until fork-tender, and still bright green. Turn off heat and puree with immersion blender. Add cheese and stir until smooth.

Pesto Chicken
A quick and flavorful chicken dish made with homemade pesto that was made weeks ago and frozen.
-salt and pepper to taste
-1/2 cup homemade pesto
-1/2 cup grated parmasean
Sautee chicken until brown and cooked through. Remove from heat and add pesto. Stir to coat. Place on a serving dish and sprinkle with grated parmasean.

Fresh Strawberries
Mmm. It's finally strawberry season, and you remember what a real strawberry tastes like (and wonder why you eat strawberries the rest of the year).

Shrimp, Noodles and Brocolli in Spicy Broth
A favorite, super-easy, weeknight meal. And very healthy, made with very little added fat.
-1 lb shrimp, peeled
-1 onion, thinly sliced
-10 cloves garlic, peeled and minced
-1 lb brocolli flowerettes
-3 cans chicken broth
-2 tb soy sauce and chili garlic sauce
-1 tb fish sauce, rice vinegar, oyster sauce
Sautee the onions and garlic in a bit of olive oil, the soy sauce and the chili sauce. When onions begin to soften, add the noodles and stir to coat. Then add the broth and the rest of the sauces and simmer, covered for 20 mintutes or so. Add the shrimp and brocolli and cook until both are tender, just a couple of minutes.
