Dinner at Home


Shrimp Scampi with Brocolli
We used kelp noodles for this dish, but didn't let them cook long enough to get soft. Still, the flavors were tasty.

-15 peeled shrimp
-1 head brocolli, but into flowerettes
-2 packages kelp noodles
-2 cans chicken broth
-1/2 onion, thinly sliced
-5 cloves garlic, minced
-1/2 cup parmasean
-1 large handful of fresh basil, chopped
-juice of 1/4 lemon
-salt and pepper to taste

Sautee the onions and garlic in a bit of olive oil over low heat until beginning to brown. Add the broth and noodles, cover and simmer until noodles are soft and most of the liquid has evaporated. Add the brocolli, and cook for another minute. Add the shrimp and cook until just done (a couple minutes). Remove from heat and toss with lemon juice, parmasean, and basil.
