Dinner at Home
Cod in a Cream Sauce with Roasted Brocolli
People say cheese and fish don't got together, but this dish proves that theory wrong. The brocolli was simply roasted in a covered dish.
-1 lb filet of cod
-2 bell peppers, diced
-1/2 onion, diced
-8 cloves garlic, minced
-salt and pepper to taste
-juice of 1 lime
-1/2 cup mayo
-1/2 cup shredded cheese
Sautee the onions, garlic and peppers in a saucepan until soft and beginning to brown. Add the rest of the ingredients and stir to mix thoroughly. Pour the sauce over the cod and bake, covered, for about 8 minutes on 400. Uncover and bake until sauce is golden and bubbly.
