Dinner at Home
Quick Seafood Stew
Alexis wasn't quite sure what to make for dinner, but she had a variety of seafood and some brocolli and made a quick stew, seasoned with Thai chili paste, that turned out to be quite tasty.
-2 cans diced tomatos
-1 onion
-5 cloves garlic, peeled
-1 red bell pepper, seeded
-1 handful fresh cilantro
-1 tb Thai red chili paste
-1 lb brocolli flowerettes
-2 filets dover sole, cut in chunks
-10 shrimp, peeled
-1 can lumb crab meat, drained
-salt to taste
Puree the tomatos, bell pepper, chili paste, garlic and onion in the food processor. Pour the mixture into a large pan and rbing to a boil. Add the seafood and simmer for a minute or so. Add the brocolli and simmer until tender. Season to taste nd sprinkle with chopped fresh cilantro. If we weren't low carb, we'd probably eat this with brown rice.
