Garlic Shrimp and Sauteed Brocollini
Another quick, weeknight meal. And since shrimp thaw so quickly in a bowl of water, this is a great option if you forget to take something out of the freezer earlier in the day.
Another quick, weeknight meal. And since shrimp thaw so quickly in a bowl of water, this is a great option if you forget to take something out of the freezer earlier in the day.
Garlic Shrimp:
-1 lb shrimp
-1 head garlic, cloves peeled and minced
-1 handful cilantro, chopped
-juice of 1/2 lemon
-salt and pepper to taste
Sautee the garlic in a bit of olive oil until beginning to brown. Add the shrimp and cook until pink, about 3 minutes. Add the rest of the ingredients, stir and serve.
Sauteed Brocollini:
-2 bunches brocollini, cut in thirds
-3 cloves garlic, minced
-salt to taste
Sautee the garlic in a bit of olive oil until beginning to brown. Add the brocollini, sautee a few minutes, then cover for about 5 minutes, shaking occasionally. Season, cook until tender and serve.
